The Perfect Evening

Last night’s plans for dinner with a friend fell through and I found myself with a lot of good groceries and some extra free time.  The first season of Glee was added to Netflix Instant Queue this week, so obviously… I threw together some quinoa, salmon and asparagus for a simple spring time meal (recipe below). Opened a bottle of wine. Grabbed this seasons Restoration Hardware catalog. And settled in for a night with myself. Perfection.

The meal went something to the tune of…

  1. 1/3 chopped onion
  2. 3 gloves garlic
  3. Splash of olive oil
  4. 2 cups quinoa
  5. 2 cups chicken stock
  6. 2 cups water
  7. 1 bunch of asparagus
  8. 1 salmon fillet
  9. 1 Handful of cherry tomatoes
  10. 2 handfuls of fresh spinach

Saute the first 3 ingredients in a medium size pot until translucent. Add the fourth ingredient and saute for about 1-2 minutes. Add the next two ingredients, bring to a boil, and then simmer with a lid on for 20 minutes. Meanwhile roast ingredients 7 and 8 on the same pan in the oven at 350 degrees. Once quinoa has absorbed all liquid, toss in ingredients 9 and 10 and cook for an additional 2 minutes. Mix everything together, salt and pepper to taste.
