Home Sick With Carrot Soup

It’s Wednesday evening. I spent the last 3 days at home sick, drinking tea, napping, and watching the first season of the O.C.  I feel weak and achy however watching Ryan Atwood’s “Fists of Fury” did motivate me to get moving and make some soup. And if not Ryan, then perhaps the delirium of my persistent fever…  regardless, my extended season CSA box gave me 5 pounds of carrots and my sister provided this promising recipe. It goes something like…

  • 1 tablespoon of canola oil
  • 1 large onion
  • 2 pounds carrots, sliced
  • 1 celery stalk
  • 1 teaspoon of salt
  • 1 teaspoon Chinese chili paste
  • 6 cups water
  • 2 tablespoons peanut butter
  • 3 tablespoons soy sauce
  • 2 tablespoons fresh lime juice
  • fresh lime wedges

Over medium heat add oil, onions, carrots, celery, salt and chili paste. Saute for 5 minutes on high heat, stirring often. Add water, cover, bring to a boil, lower heat, simmer until carrots are soft (25 minutes). Stir in peanut butter, soy sauce and lime juice. In a blender puree in batches. Repeat as necessary. Serve with lime wedges.

Mmmm. Soup is such a comfort.
